In the apparatus, liquid nitrogen is forced under pressure through a sprayhead fitted to a plastic pipe. The sample for freezing is inserted into the pipe under the liquid nitrogen sprays. Freezing times for strawberries, mushrooms and tomato slices were 6, 4 and 2 min respectively with this system.||Type of material:||Journal Article||Publisher:||An Foras Talúntais||Journal:||Irish Journal of Agricultural Research||Volume:||14||Issue:||2||Start page:||214||End page:||217||Keywords:||Freezing system; Freezing time; Drip loss||Other versions:||http://www.jstor.org/stable/25555774||Language:||en||Status of Item:||Peer reviewed||metadata.dc.date.available:||2015-09-09T09:19:40Z|
